Spinach, Mushroom and Spring Onion Pizza
(Serving Size: 3-4)

1 12" pizza crust
8 cups baby spinach leaves
6 spring onions, (purple part) thinly sliced
4 cloves of garlic, minced
1/2 lb of mushrooms
2 tablespoons of olive oil
2 ounces of mozzarella, shredded
Kosher salt and freshly ground pepper to taste

Cooking Instructions:
Preheat the oven to 450 degrees.  Saute' the onions in a small amount of olive oil until soft.  Add the garlic for 1 minute.  Remove to a small bowl.  Turn the heat up to medium high and add a little more oil and saute' the mushrooms.  Remove the mushroom and add them to the bowl with the onions and garlic.  Add the rest of the oil and saute' the spinach leaves until they are just beginning to wilt.  Add the vegetable mixture back to the pan and toss with the spinach. Season to taste with salt and pepper.  Spread the vegetables onto the crust and top with cheese and bake for 11 minutes.
